2-4 skinless boneless chicken breasts, cubed
2 Tablespoons olive oil
1/2 onion, chopped
2/3 cup chicken broth (I use water and bouillon)
1 can (10oz) tomato soup
2 teaspoons curry powder
1/2 teaspoon dried basil
1/2 teaspoon pepper
1/2 teaspoon cumin
cayenne, to taste
fresh cilantro for garnish
Saute the onions in the oil until tender. Add the chicken. When the chicken is about half-way cooked then add the broth, soup, curry, basil, pepper and cumin. Turn the heat up, when it comes to a boil, let it simmer for 10 minutes on low. Add cayenne to taste. Garnish with cilantro. Serve over rice or potatoes. YUM!
Warning: Your house may smell like curry for a day or two... I love curry and this recipe is a super quick and tasty version or what I was served in South Africa by East Indians who would cook curry all day long.
*I love to make this recipe whenever I find tomato soup on sale and I don't feel like having tomato soup. I always serve this with rolls or bread to clean up the extra sauce on the plate.*
*Yes, that is homemade bread, well from the bread machine. I recently learned how to make sourdough bread and it's awesome! Definitely worth trying and much cheaper than store-bought. Look for the recipe on this site!!!*
