6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil, chopped
3 cloves minced garlic (more or less depending on your taste)
1/4 cup olive oil (add slowly and to taste)
2 tablespoons balsamic vinegar (DO NOT LEAVE THIS OUT!)
1/4 cup fresh basil, stems removed, chopped
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Combine all ingredients in a bowl and serve with french bread, crackers, or whatever you like! (Our favorite is triscuits.) Jay says this recipe is as good as the Olive Garden's.
