Thai Peanut Pasta

I'd been craving restaurant food like this and finally got this recipe from my friend. It is a 30 min meal and is simple and tasty! All of my family ate it- even the pickier kids. I was worried the sauce might be too powerful for the kids, so I only added about 2/3 of the sauce to the pasta. Then I used the last third cooked up with more pasta for lunch the next day- 'cause we didn't have any leftovers. Mmm!


Thai Peanut Sauce

1 cup chicken broth
3 tbsp fresh ginger or less than 1 tsp ground
6 tbsp soy sauce
6 tbsp peanut butter
1 tbsp honey or more if you like sweeter sauce
2 tsp chili powder or paste
6 cloves garlic
16 oz noodles (I used fettuccine)

*1/2 cup each green onions and chopped peanuts for garnish.

Heat all ingredients through and toss with cooked noodles.

I added the green onions to the mixture and used crunchy peanut butter. Fresh ginger and garlic make this taste extraordinary! Add chicken or pork if your family has to have meat.
