Brown Sugar Muffins

My old roommate Jamie (the really fun one from NC- anyone remember her?) made these all the time in college and they are yummy. I added 1/2 whole wheat just to make them heartier and they were still very sweet and tasty. Enjoy!

Brown Sugar Muffins

1/2 cup butter
1 egg
1 cup brown sugar
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
2 cups flour
1 cup chopped nuts (optional)
1 cup milk

Cream butter, sugar and eggs. Add vanilla. Mix together dry ingredients. Add alternately flour mixture and milk to dough. Add nuts. Bake at 400 degrees for 10-20 min.
