Jalapeno Poppers


15 Jalapeno Peppers, fresh and whole
4 oz cream cheese, softened
1/4 cup mayo
3 oz green chilis (2 heaping Tablespoons)
1/4 cup grated Parmesan cheese

Preheat oven to 350 degrees. Slice japaleno peppers in half horizontally, remove seeds and membranes. (Use gloves to avoid getting the spicy oils on your fingers and in your eyes later!) Place on baking sheet lined with parchment paper to avoid messy clean-up. In a medium bowl combine cream cheese, mayo, green chilis and cheese until smooth. Spoon mixture into peppers. Bake at 350 degrees for 20 minutes.

I totally thought this was going to be "man food" but I might like them more than Jay! Don't be afraid to try these because of the heat. I personally cannot handle medium salsa and these are not that spicy to me! I have to qualify that by saying they are actually extremely spicy if you leave the seeds or too much membrane in them, so be careful to remove as much as possible if you want to remove the heat.
