No-fail Fish Marinade

1 cup olive oil
1/2 cup orange juice
3 Tablespoon white wine vinegar
1 Tablespoon lemon pepper
1 teaspoon salt
2-3 Tablespoons fresh garlic
2 Tablespoons dried basil
2 Tablespoons dried dill (I never have this on hand, so I've never used it)

Let fish sit in marinade in a glass container for 30 minutes - 12 hours in the refrigerator. Aunt Linda uses this recipe for grilling fish and she claims even her "non-fish-eating" children like it. I see why! It's yummy!

I bake it at 400degrees with no foil over it. I've learned the key to making perfectly cooked salmon is to check it often and NEVER cook it more than 18 minutes! EVER! (For an average sized fillet anyway.) I always accidentally overcook it when I leave it in longer "to be sure" it's done. I usually cook it for 12 minutes, then check the thickest center to see if it is no longer pink. Check it every two minutes after that until no longer pink. Yum! Jay's parents grew up on fish when living in Maryland and I have cooked fish many times for them... I've made lots of mistakes! I think I finally got it down. It takes practice. Another tip about buying fresh fish: if it smells fishy, it is not fresh. Fresh fish should not smell fishy.
