1/2 cup dry bread crumbs
2 tsp salt
2 tsp ground cumin
2 tsp paprika
2 tsp chili powder
2 tsp curry powder
1/2 tsp pepper
8 chicken thighs or 4 bone-in breasts (skins removed)
First, prepare chicken by removing the skin and patting dry with a paper towel. Line a cookie sheet with foil and spray generously with cooking spray. In a bowl, combine the first seven ingredients. Dip each piece of chicken in the crumb mixture and coat generously. Place on baking sheet and sprinkle remaining crumbs over the chicken. Spray the chicken generously with cooking spray (this allows the crumbs to bake well and keep the chicken moist.) Bake, uncovered, at 400 degrees for 30-40 minutes, turning the chicken over once in the middle of cooking time.
This recipe requires a lot of spices, but if you have them on hand it comes together so quickly! (I have all of these spices on hand and use them regularly. Let me know if you want to know more ideas about how to use a certain spice.) Everyone LOVES this recipe. We usually serve it with garlic mashed potatoes and a green vegetable.
NOTE 4/15/2011: Jay requested this meal for his birthday dinner last week, it's that yummy. I took a photo of the spices because they are so pretty and colorful, then I forgot to take a photo of the finished product! Ooops. Anyway, if you haven't tried this recipe yet... TRY IT!
