From Sisters Cafe:
1 bunch fresh asparagus
cooking spray
salt and pepper to taste
2 T. butter
1 T. soy sauce
1 tsp. Balsamic vinegar
Preheat oven to 400 degrees. Snap ends off of washed asparagus and place on baking sheet. Coat with cooking spray and season with salt and pepper. Bake for 12 minutes or until tender. Melt the butter in a sauce pan or in the microwave. Stir in soy sauce and Balsamic vinegar. Pour over roasted asparagus and serve.
Note- I experimented with this sauce and started mixing all kinds of veggies together. My favorite? (double sauce if necessary, but really it goes a long way). Baby carrots, onion cut into quartered chunks, potatoes cut into bite size pieces. Also good with broccoli and asparagus, just add these a few minutes after the potato mixture since it will need longer to cook. Yummy, gourmet looking, fairly healthy and very easy.
